Description
Saba (also known as vin cotto) is a condiment typical of Modena. It is a syrup made from grapes obtained from the slightly pressed must and cooked slowly. Historically, before the time of sugar, it was used as a sweetener along with honey. Farmers used this product both for sweet dishes and to season simple dishes such as polenta. Pairing: Ideal with mature and full-flavored cheeses and fresh ricottas, it also goes well as a Condiment for salad, raw or cooked vegetables. Excellent for desserts: on vanilla ice cream, with cooked fruit or cooked chestnuts. In summer, added to water or with ice, it becomes an excellent refreshing beverage or a base for unique drinks.
